I love watching my dad work. I love having a dad I enjoy being around, and who is so easy to be around too. This past year, I’ve had the genuine privilege of learning all kinds of things from him, and it’s been so fun having him here for big chunks of time. More lower protein bread. I still have quite a lot to learn about flours, I wouldn’t have expected protein level to have such an effect on loaves, but the last couple I’ve made have taught me that.
